Slight menu swap - I ended up cooking chicken thighs with zucchini fries tonight for dinner. Chicken thighs aren't for everyone, but they are an easy favoritie of mine. Marinated in fat free italian dressing and low sodium soy sauce, they take about one minute of preparation and 20 minutes of cooking - very easy, and always moist and yummy.
I hadn't tried zucchini fries before, but boy, were they good! I took the sliced zucchini and dipped it in a whisked egg with skim milk, and then dipped into a garlic and herb breadcrumb blend with low fat parmesan cheese and salt and pepper. Bake on 425 for 20 mins. Easy peasy and REALLY tasty. (64 calories per serving)
I'm not cooking any culinary masterpieces, but I sure am making my taste buds happy as I eat well without spending a ton of time preparing the meals!
