My herb roasted chicken and vegetables came out very well, if I do say so myself. I took a picture before cooking it, but not after for some reason. Even raw it looked pretty. :)
I made a soup with all of the leftovers, and the soup was YUMMY.
I also made some chili today. I used ground bison, which is always grass fed and lean. I started it off by sauteing onions with shallots, and then diced carrots and leeks, folding the bison into the carmelized vegetables, and then adding in the tomato sauce, chili powder, tobasco and other spices and 3 different kinds of beans. It has a nice kick to it, and it's a very well balanced meal.
I absolutely love cooking healthy recipes. It's very fun and satisfying!
