Okay, so it's not rock climbing, but do you have any idea how hard it is to shop for a lite, gluten free, vegan diet? That's no meats, fish, dairy, wheat, barley, rye, etc... There is dairy and wheat in almost everything on the planet, and the things they aren't in are not concerned about calories or fat at that point, in most cases. We couldn't even buy the tofu "meats" because they had wheat in their flavoring.
Darcy and I spent a few hours shopping in two different stores today, and we did a LOT of label reading! $240 later, I'm probably going to try this for a full week.
So here goes with my weekly meal plan:
For breakfast, I found some gluten free cereal bars, so I will probably stick to those and fruit.
For lunch, I'm having left overs or some gluten free vegan soup with salad.
Saturday night - Gluten Free (GF) pasta with red sauce and meatballs baked in cheese (actually, they are falafels baked in some type of cheese substitue) - I'll be sure to let you know how that goes!
Sunday lunch - Portobella "cheese" burgers on tapioca bread with fresh veggies and baked zucchini fries (I found gluten free bread crumbs!)
Sunday dinner - Vegetable soup
Monday night - Eggplant "Parm"
Tuesday night - Tofu/veggie stir fry
Wednesday - Going out to eat - research needed, but I'm thinking Indian may be the best bet
Thursday - Grilled "cheese" sandwiches on tapioca toast grilled in very little vegan butter with GF and dairy free organic split pea soup.
Friday - Sundried Tomato GF Risotto with fresh mixed veggies
I'll be sure to post the results of the food taste as I try the meals. I have had dairy alternatives before, and usually it's not tasty.
I tried the falafel's already, and they were quite good. It's just veggies and beans.

It sounds like pure torutre but if it makes your pain go away, it's worth a try.

LOL - it's not pure torture at all. I always love a food challenge, because although I doubt I'm going to go gluten free or vegan for life (at least not right now), but it's fun and educational to have to look for new foods you wouldn't normally buy or to come up with more creative ways to make recipes you like. I don't think it's going to make me lose weight any faster - I ate more calories today (964) than I did all week. This stuff isn't low cal - I just have to watch my portions like a hawk.
I love your abilitry to embrace and try new things. Have fun with it.
