I have been sticking too the carnation instant breakfast for breakfast (often with a banana blended in), but I may venture into the cereal realm this coming week. For lunch, I've been having the wheat thin flat bread with hummus and tabouli, or soup, salad, or leftovers. I'll plan to do the same this coming week.
My dinner plan is as follows:
Saturday night - We are meeting up with the girls at XO on Elm, so I'll just plan to have the same middle eastern taster that Darcy and I had on Thursday. It's delicious and perfectly filling for me. If I'm extra hungry for some reason, I'll have a light salad with it.
Sunday - Grass fed lean beef stroganoff over whole grain egg noodles with mixed greens (I'll post my light version of the recipe once I decide how I want to make it)
Monday - Grilled lemon shrimp with quinoa and edamame (more on this later as well!!)
Tuesday - Indonesian braised pork with mixed veggies
Wednesday - Leftovers
Thursday - Chicken thighs with a side veggie salad with garbonzo beans
Friday - Whole grain english muffin pizzas with baked zucchini fries
Every meal I make takes under 30 minutes to make - if you ever want a recipe, let me know.
I love the foods I eat, and I do not feel like I am going without by any stretch of the imagination. I love my healthy, fresh, delicious foods! :)
