This isn't exactly fun anymore

Eating a gluten-free vegan diet is HARD work.  Holy Moly.  I'm sick of it already, and this is only day 3.  The portobella burgers were okay, but not great.  The "cheese" on them was plain nasty.  On a good note, I haven't had any pain in my upper right abdomen (except for some mild pain on Saturday night) since I've been eating this way, so I think it's helping.

I'm really not interested in eating vegan for life at this point, but I'll see what the doctor says.  I can eat food that's good for me that I don't love, but I really enjoy eating well.  I look forward to dinner each night, because it's always yummy.  Tonight we're having tofu stir fry.  I'm not excited about that at all - I'm dreading it. 

Oh well, hopefully at least I'll be down some weight tomorrow.  :)

I have a new found respect for vegans!

Dieting is really hard work and takes a great amount of preparation. I really had no idea. Stir Fry is usually really good, but then, I have never had TOFU stir fry.

This recipe might be too high in calories for you, but it looks good to me:

Golden Tofu Triangles with Rich Peanut Sauce

tofu:
two 16-ounce tubs extra-firm tofu
1 tablespoon olive oil
salt

sauce:
3/4 cup crunchy natural peanut butter
3 tablespoons reduced-sodium soy sauce
2 1/2 tablespoons lime juice
2 tablespoons natural granulated sugar
2 teaspoons grated fresh ginger
1/2 to 1 teaspoon Thai red curry paste

Cut each block of tofu into 6 slabs crosswise. (Michelle's note: Make it 8 slabs. The texture is much better with thinner pieces.) Blot well with tea towels or paper towels, then cut each slab in half to make 2 squares. Finally, cut each square on the diagonal to make triangles.

Spread the oil evenly over the surface of a wide skillet and heat. Add the tofu and saute over medium-high heat until golden on both sides, 10 to 15 minutes. Sprinkle with a little salt.

Combine all the sauce ingredients in a small saucepan with 1/2 cup water. Whisk together and heat to a gentle simmer.

Cook over low heat for 2 minutes, stirring frequently. Add a bit more water if too thick.

To serve, arrange some of the tofu triangles on each plate and drizzle with the sauce. Or, for a fun effect, thread the triangles onto skewers, then spoon the sauce over them.

Hi Kristen,

Rhonda and I just watched Food Inc. (on demand) that will help you eat vegan! It is a great show on how our food is really made. I always say I want to be vegan or at least vegetarian but it is A LOT of work. Great work for doing 3 days!

Jenn - I saw your post on FB, and I made a mental note to watch it, as I've been meaning too, but I keep forgetting.

I have a feeling you're right - it would have that affect on me, so I'm going to try to find it tonight! :)
