Gluten Free Pasta with Meatless Balls! (so what exactly did I just eat??)

That was not an image of my meal, and if anyone shows that picture to Darcy, she may cry.  LOL

Our dinner was very good, though!  It was better than I thought.

The brand of GF pasta I tried tonight was actually much better than the last one I tried.  The sauce was just normal, organic, meat/dairy free sauce that I seasoned up a bit, and then I cooked the falafels in the oven with a little soy cheese on top for the meatballs.  I even found a vegan GF parmesan cheese substitute, and the whole meal was quite tasty!

Falafels are actually going to be quite a good meat substitute, although I'm sure if I made my own, they would have fewer calories than the ones I bought at the natural foods store.

I'm excited for tomorrow - I really do love the challenge of eating healthy foods, and still making them taste good.

Today, I ate 964 calories, had 20 grams of fiber, 40 grams of protein, and 30 grams of fat.  It was a very well balanced diet, and I just need to make sure to keep my intake of non dairy calcium products while I'm dairy free.

That looks delish and falafels sound better than tofu or any other sort of meat sub.

Glad it wasn't as bad as you thought.

I don't even eat meatballs so falafels...not so much...lol

The pasta sounded good though
